Combine coconut milk, coconut sugar, and sea salt in a saucepan over medium-high heat.
Bring to a boil, then lower heat to medium-low and simmer for about 40 minutes, stirring occasionally.
Stir more frequently in the last 5 minutes to incorporate darker caramel bits.
Remove from heat once the sauce is dark amber and thickened, then stir in coconut oil and vanilla extract. Set aside to cool.
In a bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, and salt.
Add wet ingredients: olive oil, eggs, greek yogurt, lemon zest, and lemon juice. Stir to combine.
Lightly grease a 9-inch cake pan and line with parchment paper.
Layer sliced honey crisp apples on the bottom of the pan, followed by caramel sauce and olive oil cake batter. Smooth evenly.
Bake at 350°F for 35-40 minutes or until a knife inserted comes out clean.
Allow to cool for 10 minutes, then flip upside down and remove parchment paper. Cool fully before serving.
