A delicious and refined sugar-free cranberry sauce made with fresh cranberries, orange juice, and spices, perfect for Thanksgiving. This sauce thickens as it cools and can be made in advance for convenience.
In a medium Dutch oven, add whole cranberries, cinnamon stick, maple syrup, orange juice, orange zest, nutmeg, and vanilla extract.
Stir to combine and then simmer uncovered over medium heat until the cranberries begin to pop, about 8-10 minutes.
Once the cranberries begin to pop, mash them with a wooden spoon to your desired texture.
Continue to simmer over medium heat until the sauce has thickened, about another 5 minutes.
Remove from heat just before your desired consistency, as it will thicken slightly as it cools.
