This creamy Tuscan chicken is quick to make and packed with protein, veggies, and flavor. Perfect for a weeknight dinner, it features chicken breasts, cherry tomatoes, spinach, and a rich sauce.
In a large skillet over medium heat, heat olive oil (about 2 tbsp.).
Add chicken breasts (halved) and season with oregano, salt, and pepper.
Cook each side for 6-7 minutes, until no longer pink. Remove and set aside.
In the same skillet, sauté onion and tomatoes over medium-high heat for 10 minutes, until onions are browned and tomatoes have begun to pop open.
Add spinach and sauté until wilted down.
Add garlic and sauté for 1-2 more minutes, until fragrant.
Add Kalamata olives, Parmesan cheese, fresh basil and stir to combine.
Reduce heat to medium-low and simmer for 5 minutes.
Add heavy cream and olive brine, stir to combine.
Add your cooked chicken breasts into the sauce, followed by fresh lemon juice.
Cook until chicken is heated through, an additional 5-7 minutes.
Serve over a base of your choice (pasta, rice, zucchini noodle all work great here!).
Garnish with some fresh basil and a pinch of Parmesan, then enjoy!
