Fakes is a hearty, comforting Greek dish made with protein-rich lentils, vegetables, and spices. This nourishing meal can be found all over Greece in homes and tavernas. It's perfect for savoring the flavors of the Mediterranean diet.
In a large Dutch oven or pot, sauté your onions, carrots, celery and garlic with olive oil over medium heat until tender and starting to brown (10-15 minutes).
Once your vegetables have softened, add in your lentils, followed by your broth, tomato paste, oregano, salt and bay leaves.
Bring to a boil, then simmer over medium-low heat for 20-25 minutes until lentils have absorbed most of the broth and are tender.
Serve with a drizzle of olive oil & balsamic vinegar.
Add feta cheese directly on top, and break a little piece off with each bite as you eat.
