Fasolakia is a traditional Greek dish that features a thick and rich olive oil-based stew with potatoes, green beans, and tomatoes. It's nourishing, comforting, and oh so delicious.
1. Add the onions, potatoes, salt, and olive oil to a large pot. Sauté over medium high heat until softened.
2. Add the green beans, grated tomatoes, parsley, garlic, tomato paste, sugar, and water. Adjust the water amount to almost cover the beans and tomatoes.
3. Cover with a lid and simmer over medium low heat for 30 minutes without boiling.
4. Remove the lid and simmer for an additional 25-30 minutes until the potatoes have absorbed most of the liquid and the sauce has thickened slightly.
5. Serve with fresh feta and parsley.
