Delicious and high-protein egg bites made with eggs, mushrooms, bell peppers, milk, and cheese, perfect for a snack or meal prep. These bites are baked to a golden brown and topped with chives for a flavorful finish.
 Preheat your oven to 350°F.
Wash and chop your mushrooms and bell peppers.
Sauté your mushrooms and peppers over medium-high heat with olive oil for 10 minutes, or until golden brown. Allow to cool slightly.
Crack your eggs into a large bowl, add milk, salt, pepper, onion powder/salt, and garlic powder. Whisk to combine.
Add in the sautéed mushrooms and peppers, whisk again to combine.
In a silicone muffin tin, evenly distribute the egg mixture into all 12 muffin cups, topping each with a sprinkle of cheddar cheese.
Place the silicone muffin tray on a baking sheet before filling to prevent spills.
Bake for 25-35 minutes, or until the egg bites are fully set and golden brown.
Top with chives once done baking and serve.
