Peanut Butter Oat & Sweet Potato Cookies

1: Cook the sweet potato using your preferred method (baking for 45 minutes at 425°F is recommended).

2: Preheat the oven to 350 degrees.

3: Line a large baking sheet with parchment paper.

4: Allow the potato to cool to room temperature, or speed up the process by chilling it in the refrigerator. Once cooled, mash the sweet potato with a fork or potato masher and measure out 2/3 cup.

5: Add all of your ingredients to a large bowl and stir until well combined. Expect a stickier dough than regular cookie dough.

6: Drop mounds of cookie dough onto the parchment lined baking sheet, shaping them into discs as they won’t spread during baking. You can make 9 cookies or adjust the size as desired, noting that cook times will vary.

7: Bake cookies on the center rack of the preheated oven for 15 minutes or until crispy on the outside. Allow to cool for 10 minutes before eating.
